DIY : Rice Berry Congee with Minced Pork
It’s 18 deg celsius in Bangkok. This is winter wonderland, baby ! Don on your beanies and mittens ! As the sole meal creator of the family, I thought this would be the perfect time to make rice congee … with riceberry grains :
Thai Rice berry rice is a cross-bred of Thai jasmine rice ( known for its fragrance and softness ) and the “Hom Nin” rice ( known for its antioxidant properties). This results in a highly nutritive rice that is also good to the taste. I use 1/2 cup of rice berry to 5 cups water. I added a chicken stock cube and 2 pieces of conpoy ( dried scallops ) for the umami taste.
When the rice has soften, I use a whisk to break up the rice. This saves on the boiling time. When the congee thickens to your preferred consistency, drop in some minced pork rolled into little pork balls. I marinated them with soy sauce, sesame oil and pepper. Turn the heat off when the pork is cooked since they get tough if overcooked. Sprinkle some pepper + green onions and enjoy your steaming hot bowl of rice congee.
